Shepherd's Pie Recipe | Cast Iron Skillet Cheesy Mashed Potato topped Beef Shepherd's pie Shepherd's Pie Recipe. Cast Iron Skillet Cheesy mashed potatoes topped shepherds pie made with saucy beef and vegetables. POTATOES AND CHEESE ON TOP OF MEAT, such a delicious meal!

Simmer ground beef with onions, garlic and carrots then stir in beef broth and let it simmer. Make a batch of quick and EASY cheddar cheese mashed potatoes and bake it until its bubbling HOT!

Ingredients
For MASHED POTATOES
4 russet potatoes
2 tablespoons of butter
3/4 cup of half and half or heavy cream
1/2 cup ( or more if you like) of shredded cheddar cheese
salt

For BEEF MIXTURE
3 carrots, chopped
1/2 a large onion, chopped
2 cloves of garlic, chopped
1 teaspoon of salt or more to taste
1/2 teaspoon ground pepper
1 cup frozen spinach
3 tablespoons of flour
1 cup of beef broth
12 inch cast iron skillet or other wide pan
Preheat oven to 350 degrees


Boil 4 potatoes and mash them with butter, half and half, salt and cheddar cheese
Saute onions and carrots then add 2 and 1/2 pounds of lean ground beef in batches.
Brown the beef in batches if necessary
Add the chopped garlic
Stir in frozen spinach and cook until the spinach is thawed.
Sprinkle in the flour and stir until no lumps remain. Cook for 5 minutes
Pour in beef stock and simmer for about 5 minutes
Turn off the heat and add the mashed potatoes on top
Bake for 10 - 15 minutes then serve
