Quick and Easy Homemade Croquette Patties (from Leftovers!!) Hi Guys!! I thought I would share this quick and easy recipe made from leftovers. We call them "Croquettes" but they are just our version of them.
I use leftover chicken or turkey and leftover stuffing. Chop the chicken small in food processor or by hand and mix in a little salt, pepper and poultry seasoning to taste. Now add an egg and form into patties (or any shape you like ;) coat with bread crumbs and place on a greased cookie sheet. Then spray top of patties too. Bake in a preheated 400 degree for 10 minutes, flip patties and bake for another 15 mins or until lightly browned. These are great on sandwiched or on their own with some gravy. ( I love mine with equal parts cream of chicken soup and milk and leftover gravy if there is any, with salt and lots of black pepper.
***You could also use boxed stuffing and a rotisserie chicken****
These freeze great too. i just wrap them on wax paper and put them in a freezer bag. you can cook them from frozen in the oven or in the microwave.
