According to online resource, fern is high in Vit. A and Vit. C. It is also a good source of potassium, iron, manganese, copper, and others vit/ minerals that are good for our bodies.

The 1st fiddlehead fern is Ostrich fern. Hmong people are familiar with this fern. We like to boil it with fish, eat with pho, and stir fry. It has a nutty taste and taste like Chinese mustard green.

The 2nd fiddlehead is Bracken fern. They are many ferns look similar to Bracken fern, but it is different from others. Bracken fern has only a stalk grows from the ground and its fronds have triangle shapes. According to the web, it is not good to eat too much of Braken fern because it has a chemical called “ ptaquiloside”. This chemical had found to cause cancer in tested animals. According to the study, Bracken fern is orally administered to rat, guinea pigs, and cow. Then they are found to have cancer in their internal organs, especially the small intestines. Because toxic chemicals are found in all parts of this fern, it is good that we minimize the intake of this plant. Bracken fern is my favorite but getting to know its toxic side, I’ll have to minimize my intake from now on.
The 3rd fiddlehead is lady fern. It looks similar to Bracken fern, but its fronds are diamond shapes. There is not a lot of information about this fern, but it is also edible.
